Friday night is usually pizza night. The girls put in a special request for Corn Dogs.
I purchase "chemical free" yellow corn to make my own cornmeal. I use the cornmeal in Corn Bread or on occasion Corn Dogs. I didn't have any cornmeal so I had to pull out the grinder and get busy. I like to grind a few pounds so I can keep some stored in the freezer.
Corn Dogs
1 egg, beaten
1 cup milk
1/2 cup cornmeal1 cup milk
1/4 cup honey
1/4 tsp. salt
1 1/4cup flour -I used spelt, but you could use wheat or white
1 tsp. baking powder
12 hot dogs
Mix all the ingredients together.
Cook hot dogs, drain and pat dry.
Dip hot dogs in batter and place in deep fryer until browned.

Another recipe I use is a cornbread mix. I like having some convenience foods on hand, without all of the added ingredients you find in the boxed foods at the stores.
kids love corn dogs, but I refuse to buy the store bought ones. I knew I could make them, but too lazy to look up a recipe. Thanks a bunch!!! No more excuses!!!!
